Our Founder
Meet Alison! Our founder and head chef at the Tonic Merchant. Alison comes from a background as an international chef working on a range of luxury super yachts, weddings, parties, product launches and other special events. When it comes to knowing great flavours we are in safe hands!
Our Story
After many months of wondering “how do you make tonic?”, it took a lockdown for Alison to start experimenting with cinchona bark (natural quinine).
The first batch was a lightbulb moment and after much research & testing she has developed exciting gin paired flavours.
The syrups are all hand crafted from real & local (whenever possible) ingredients with a small team in Christchurch.
Our Mission
To bring you carefully handcrafted flavours which pair perfectly with your favourite Gin.
Alison’s passion as a serious foodie & gin connoisseur continues to be her driving force with plans to expand and grow the business throughout
New Zealand and Australia while remaining true to its small batch handcrafted nature.
